					<description><![CDATA[<p>Talking about a Mom&#8217;s worries, unanimously each of us would confess it to be  feeding our kids just the right food. Healthy food options aren&#8217;t hard to find, thanks to blooming internet resources, cookbooks, Cookery shows etc. To cook those healthy recipes too isn&#8217;t a big problem but the toughest challenge is to feed the picky eaters. You sneaked in the lettuce leaf in their not-so-healthy burger and the smart pants just removed the lettuce and happily hogged the burger&#8230;.plan failed 🙂 You put raisins in the cutlets , and the tiny tot without caring for table manners, spat it out from the mouth&#8230;.Argh !!!! Next time you try to act more smart and chop the raisins, add to the cutlets and watch the kid eating a morsel..one bite, two bites..three bites..so far so good&#8230;..fourth bite and that chopped raisin hit the palate&#8230;..alarmed, the kid scrutinize the cutlet, finds two or three tiny pieces of raisins hidden in some corners of cutlet, accuses you of cheating, refuses to eat further&#8230;plan B failed !!!! You make his/her favorite garlic bread just because you want to get that vegetable soup down his/her throat. What happens?? Reluctantly few spoonfuls of soup are taken and rest of the tummy is filled up by garlic bread. The rest of soup sits in the bowl, mocking at you&#8230;and yeah not to forget that the dinner is given a miss. Double loss !!!! The tug of war continues..and so does the failure of many attempts&#8230;.adding potatoes to a bottle gourd curry, and the lad end up eating just potatoes.The sneaked slices of carrots are picked out from vegetable sandwiches, the carrot paratha packed in a lunchbox comes back like an unstamped postal Envelope, the mixed vegetable subzi is simply refused to be honored by the young gentleman unless he  catches  some glimpses of paneer or potato.The cauliflower and potato subzi packed in the lunchbox, returns back, half eaten.. the leftover remaining half  obviously being cauliflower. But then if kids are smart, mothers ought to be smarter..raise you hands if you agree 😉 So to win in this battle (Not to be a winner, but to make your kids eat healthy), some fool proof plans need to be sketched out.And one such attempt was to make my kid eat sprouts. He simply can&#8217;t stand a bowl of sprout salad. Though Usal (A curry made using sprouts) is fairly accepted by my kid, obviously I can&#8217;t rely on just that one option.Variety is the spice of life&#8230;isn&#8217;t it? So here comes, the healthy Alu tikki chaat with some sprouts , carrots , peas and french beans sneaked in potato tikki and topped with some beaten curd, khajur imli chutney and garnished with chaat masala and nylon sev&#8230;.Yummmm ! The basic recipe of the tikki is highly inspired by Sia&#8217;s  Stuffed Alu Tikki , with some modifications like, along with peas, I used parboiled sprouts, carrots, french beans and also I chose to mash everything together so that it becomes hard for the kid to leave out any stuffing 😛 Print A Healthy Alu Tikki Chaat Prep time:&#160; 30 mins Cook time:&#160; 30 mins Total time:&#160; 1 hour Serves:&#160;3-4 A healthy Chaat made from boiled sprouts and potatoes, some veggies and spices, topped with flavored tangy yogurt dip. Ingredients Potatoes 4 Mixed sprouts or any sprouted lentils &#189; cup Carrot 1 French beans 2 Peas, a handful Cumin seeds 1 tsp Ginger garlic paste 1tsp Green chillies 1-2 (Or as many preferred) Bread crumbs &#190; cup (Or grind 4 slices of bread and add) Salt as per taste Asafoetida (hing) a generous pinch Dried Mango powder (Amchoor ) &#188; tsp Oil to cook mixture 1tbsp Oil to shallow fry Tikkis Method Boil, peel and mash potatoes Boil the sprouts, chop the carrots and beans and boil them along with shelled peas it tender. Heat a pan, add 1 tbsp of oil, heat it, add Hing and cumin seeds. As the seeds change colour to darkish brown, add ginger garlic paste, Chopped green chillies and saute well. Add bread crumbs, mashed sprouts and vegetables and mix properly. Now add boiled potatoes and salt and cook for few minutes.Keep mixing to avoid the mixture from sticking at the bottom of the pan. Put off the gas and add Amchoor powder, some chopped fresh coriander leaves and mix again. You can lemon juice instead of Amchoor powder. Now let the mixture cool down a bit and divide it into 5 to 6 portions. Grease your palms with some oil and take each portion of the mixture and flatten it to make a Tikki (flat disk). Repeat the procedure for rest of mixture. Now shallow fry each tikki , in some oil, flipping it both sides so as to cook the tikkis till nicely browned. Arrange each tikki on a serving plate, top it with some beaten curd to which some salt is added, some green chutney, imli khajur chutney, a dash of chaat masala powder, coriander leaves and handful of nylon sev or any other farsan. 					<description><![CDATA[<p>Food blogging is Hazardous. Yeah, what else will you call an obsession when all you can think of, is cooking food (mind you..cooking and not eating..for the eating part, a blogger keeps  hunting for a  scapegoat ) all day long, and many times in your dreams too. A recipe request by a reader of your blog, in you mail Inbox, could leave you researching various resources till you find that perfect recipe to share . After cooking, comes Clicking sessions, wherein you not only test your photography skills, but also your family&#8217;s patience, as the poor souls wait for their turn to assail that tempting looking food(yeah at times food looks and tastes good too..Why the doubts?) , while you are busy with your acrobatics trying to click the picture with hundreds of angles. The passion leaves you not only cooking more but stocking more too (In pantry, in refrigerator and of course in your body as fats). Interacting with bloggers , talking about International and National , local and exotic cuisines, end up  with you purchasing more food stuff than required. Above that, the mushrooming malls in vicinity spoil you with loads of choices to fill your shopping cart, and empty your wallets. As a result, the refrigerator is overstuffed with tons of varieties of flours, the ever- flowing- in -vegetables, nuts, corns, mushrooms, breads, herbs and so on so forth.My situation is not different from Dhivya of Chefinyou who expresses her plight funnily with this quote &#8220;What can I do if my stocking talents are better than my expending?..lol. But at times, I do feel enough is enough and that I need to give my passion of  cooking  a well deserved break ( and that happens quite frequently, say ..every weekend 😉 ). That gives break to the grocery shopping too, until I go out of stock of  vegetable supplies  and then keep wondering what to cook in absence of fresh vegetables. At such times of distress, simple but healthy and filling food is all what I look around for. And Dal sandwich( Dal toast) is one such option. I had already posted its recipe. So why again you may ask, right? Well it was supposed to be for the Repost Event but I missed the deadline (Darn !). But then, I can still go ahead and share it with you, after all I clicked fresh pics for the same, so can&#8217;t afford to trash it 😀 So here comes Dal sandwich, a very popular street food of Sindhis. The recipe is inspired by that of a  famous Eatout, called Shankar Dalwaala, though not yummm as his, but still good enough to gobble. Print Reposting~ Dal Sandwich Prep time:&#160; 20 mins Cook time:&#160; 20 mins Total time:&#160; 40 mins Serves:&#160;2 Ingredients 1 cup Moong dal (Dehusked, Yellow split moong beans) enough for 2 sandwiches Turmeric powder &#188; tsp or bit less. Salt as per taste For tempering: 1 tsp Oil/Ghee Few pinches of Garam masala powder Less than &#188; tsp of Red chilly powder &#189; tsp of Coriander powder Bread slices (2 for each toast). I used Brown Bread, but you can go ahead with white too. Butter Boiled potato 1 Boiled beetroot 1 Tomato 1 Onion and/or cucumber 1 Mint coriander chutney Salt just for sprinkling Black pepper powder Chaat masala Red chilly powder Coriander powder Sev or farsan of choice Coriander leaves Tomato Ketchup (optional) Method Pick, rinse several times and soak yellow moong dal for 15-30 minutes. Boil it with enough water, salt and turmeric powder till cooked. Whisk it properly, add more water if required , but the consistency of dal should be thick. Temper it with a spoonful of hot ghee to which redchilly powder and coriander powder is added. Add garam masala after removing the tempering from heat, just before adding to the dal.Simmer on low flame and make sure the dal is piping hot when you serve the sandwich. Peel and cut in round slices, boiled potato, beetroot and also onion and cucumber. Chop some of boiled potato, beetroot,onion, tomato and sprinkle some salt, coriander powder, red chilly powder, coriander leaves. Reserve these for garnishing the sandwich. Now take a bread slice, apply some butter, place slices of boiled potato, boiled beetroot, tomato and onion/cucumber. Take another slice apply some chutney on it and place at the top of previous slice. Now heat the griddle, put some oil or butter/Ghee and roast the sandwich on medium flame till slightly brown in color. Place the sandwich on a serving plate, cut it into pieces, top it up with few spoons of dal, sprinkle some chaat masala, black pepper powder, red chilly powder, some chutney, tomato ketchup (optional), some of the chopped mixture of beetroot, tomato, potato, onion and finally farsan or sev. Serve immediately. 3.3.3077</p>

					<description><![CDATA[<p>Here&#8217;s the potato mixture which is stuffed in bread slice to form a roll Print Bread Rolls Prep time:&#160; 20 mins Cook time:&#160; 10 mins Total time:&#160; 30 mins Serves:&#160;1-2 Ingredients Potato 1 ( Makes about 2-3 bread rolls) Bread slices 4 Garlic 3 cloves Ginger just a bit Green chillies 2 Curry leaves 4-5 leaves Mustard seeds 1 tbsp Turmeric powder &#188; tbsp Coriander powder &#188; tbsp Garam masala powder &#188; tbsp Few pinches of Amchoor powder or 1 tsp of freshly squeezed lemon juice A pinch of Hing Salt to taste Coriander leaves for garnishing Oil for frying Method Boil potato, peel and mash it lightly In a pan, heat 1 tbsp of oil and add pinch of Hing powder, add pounded garlic and ginger, then add curry leaves and mustard seeds Saute till garlic turns light brown, add chopped green chillies, then add turmeric powder, coriander powder, garam masala powder and mix well Add mashed potatoes, salt and mix well .you can also add boiled peas. Cook on low flame for about a minute, garnish with coriander leaves.Add lemon juice. Let the mixture cool a bit Take a bowl of water, add some red chilly powder and a dash of lemon juice (optional) Dip a bread slice in this water, then remove immediately and squeeze it gently in between your palms, place the potato mixture in center of bread slice and fold it from sides Cover from sides in such a way that it forms a shape of a roll Repeat procedure for whole mixture Add one roll at a time in hot oil and fry till crisp golden brown The health conscious people can try out making roasted sandwiches or toasters instead of fried rolls, using same stuffing(as shown in picture) Enjoy this delicious and hot favorite of kids, with ketchup or chutney of your choice 2.2.1</p>
