- Potato 1 ( Makes about 2-3 bread rolls)
- Bread slices 4
- Garlic 3 cloves
- Ginger just a bit
- Green chillies 2
- Curry leaves 4-5 leaves
- Mustard seeds 1 tbsp
- Turmeric powder ¼ tbsp
- Coriander powder ¼ tbsp
- Garam masala powder ¼ tbsp
- Few pinches of Amchoor powder or 1 tsp of freshly squeezed lemon juice
- A pinch of Hing
- Salt to taste
- Coriander leaves for garnishing
- Oil for frying
- Boil potato, peel and mash it lightly
- In a pan, heat 1 tbsp of oil and add pinch of Hing powder, add pounded garlic and ginger, then add curry leaves and mustard seeds
- Saute till garlic turns light brown, add chopped green chillies, then add turmeric powder, coriander powder, garam masala powder and mix well
- Add mashed potatoes, salt and mix well .you can also add boiled peas.
- Cook on low flame for about a minute, garnish with coriander leaves.Add lemon juice.
- Let the mixture cool a bit
- Take a bowl of water, add some red chilly powder and a dash of lemon juice (optional)
- Dip a bread slice in this water, then remove immediately and squeeze it gently in between your palms, place the potato mixture in center of bread slice and fold it from sides
- Cover from sides in such a way that it forms a shape of a roll
- Repeat procedure for whole mixture
- Add one roll at a time in hot oil and fry till crisp golden brown
- The health conscious people can try out making roasted sandwiches or toasters instead of fried rolls, using same stuffing(as shown in picture)
- Enjoy this delicious and hot favorite of kids, with ketchup or chutney of your choice
