| A Flavorful Curry| Potato Mushroom Paneer and NutrelaTVP |

Nutrela and mixed vegetable curry, a nutritious, delicious Indian Curry !
- Nutrela (TVP) half cup
- Fresh Button mushrooms 7-8
- Paneer 125 gms
- Potatoes 2 medium sized
- Onions 3 medium sized
- Tomatoes 2 large ones ( Or use one tomato and 1½ tsp of Curd)
- Green chillies 2-3 or more as per taste
- Akha (Khada/Whole) Garam masala (Includes, 1 green cardamom, 1 Black cardamom, A tiny piece of javitri or Mace,1 inch bark of cinnamon , A Kamaal Patt (Tej Patta) and a tsp of Cumin seeds)
- Crushed Ginger 1 inch piece
- Crushed Garlic 5 cloves
- Turmeric powder ¼ tsp
- Coriander powder 1 heaped tsp
- Salt as per taste
- Oil 2 tsp
- Soak TVP in warm salted water for 15-20 minutes.
- Peel and cut the potatoes into chunks. keep soaked under water till further use.
- Cut the paneer into cubes , add some salt and shallow fry or deep fry ( you can also use paneer without frying) these, few at a time, in small quantity of oil, till nice golden in colour. Drain on kitchen towel.
- Wipe clean fresh button mushrooms and cut them in desired shape (cut into 2/4 or slice these thickly). Again shallow fry or deep fry in little oil. Drain on kitchen towel and keep it aside.
- In the meantime,in a pressure cooker add 2 tablespoons(or tad less) of oil.
- Add Akha Garam masala and let these sizzle in oil for few seconds.
- Add chopped onions, and saute on medium to high flame till onion turns nice golden brown color.
- Add crushed ginger and garlic (you can use paste too) and saute for few more seconds.
- Add grated or chopped tomatoes, ( or one tomato and curd), green chilles, salt (remember there is already some in soaked nutrela) turmeric powder and fry well.
- When tomatoes are about to cook, add drained and squeezed Nutrela TVP and potato chunks to the cooked mixture, add coriander powder and
- Bhuno for 2 minutes.Sprinkle some water if mixture tends to stick to the bottom of vessel.
- Add around 2 cups of water, add the fried mushrooms and close the lid of pressure cooker. wait for two whistles. Put off the gas and let the pressure inside cooker subside.
- Add fried Paneer cubes (You can sprinkle some garam masala powder , some kitchen king and kasoori methi at this stage to spice it up further.I didn't added any). Adjust the seasoning and the consistency of gravy and let it simmer for a while.
- Garnish with coriander leaves and serve with either Roti or rice or both.
