Dear Anuradha,
Its not mandatory to grate the paneer.Its just that sometimes the paneer we get is not soft enough to crumble well.Grating gives some uniformity in texture, when using frozen variety.If you are using home made or soft malai paneer, you can easily crumble it.
Regarding boiling milk, then again,its a matter of choice.We in India generally have the habit of boiling milk before using coz we either use pasteurized milk from the plastic bag, or we buy from Tabela (cow shed)..in either case its good to boil milk before using.Carton milk could be used without boiling..its just that we do not use food stuff sold in tetra packs generally, in our day to day cooking :-)]]></description>
